Chicken Tikka Masala
We live in Kirkland, Washington, and when we first moved here, there was a restaurant that we loved that served the best chicken tikka masala ever. We loved it so much we would order carry-out almost every week. Unfortunately, the restaurant (Shamiana) closed down years ago and we had not been able to find a local restaurant that made our favorite dish as well. My wife found this recipe and we tried it this week - and wow! It was fantastic. Note: I realize that the addition of butter in this recipe might put it close to the category of Butter Chicken, but the original recipe is definitely Tikka Masala, and I find the butter brings back the memory of Shamiana.

Midnight Pasta
Midnight pasta, often referred to in Italy as spaghettata di mezzanotte, is a beloved Italian culinary tradition and a go-to, quick meal for late-night hunger. It is fundamentally a "pantry pasta"—a quick, simple dish made from staples usually found in the kitchen, often featuring garlic, olive oil, and red pepper flakes. We found two versions on NYT Cooking - one with a simple olive oil base, and this one with tomato paste added. Note: we modified the recipe to include green olives and capers.

Shrimp Scampi Pasta
We've been making this recipe for 20+ years, and it is always a crowd-pleaser. It started when we got Ina Garten's Back to Basics cookbook and found a recipe for Baked Shrimp Scampi. We tried it once, as it was intended as a main dish. But then we said, what if we put this over linguini? And a star was born. Credit Food Network for the recipe.

Roasted Chicken with Cauliflower and Herby Yogurt
This one-pan chicken recipe is easy to prepare, tasty, and just a bit spicy, thanks to the Aleppo pepper, which is common in Turkish, Middle Eastern, and Mediterranean cooking. The recipe calls for bone-in, skin-on chicken thighs, but we've used boneless, skinless thighs and have also experimented with boneless chicken breast, and the flavors still work well. Just be wary of overcooking the chicken in whatever form you use.

Gochujang Burger with Spicy Slaw
Source: New York Times Cooking This may be the perfect all-purpose sauce — BBQ, marinade, dressing — for your summer cookouts. Tangy and sweet rice vinegar cuts through the spicy richness of gochujang, and toasted sesame seed oil amps up the smokiness you get from the grill. The sauce does double duty in this recipe: It’s used to flavor the pork bulgogi-inspired patties, and it’s used as a dressing for the cucumber, sprout, and carrot slaw. These burgers can also be made indoors in a large cast-iron or heavy skillet over medium-high heat.

We've been inspired recently by a series of Cauliflower recipes, and by Morrocan spices and flavors. Several of those recipes led us to develop this roasted Cauliflower dish, topped with Chermoula, a Morrocan chimichurri-like sauce - see our recipe here. We've had it both as a vegetarian main course and as a side with a protein (e.g., halibut, shrimp, chicken, etc.) And according to the Mayo Clinic - when it comes to nutrition, cauliflower is a superstar. It's **high in vitamins C and K, and is also a good source of folate, which supports cell growth and is essential during pregnancy**. Cauliflower is fat-free and cholesterol-free. And it's low in sodium.
