Directions

    place a large, wide pot filled with 2 inches of oil over medium-high heat and bring to 340 degrees f on a deep-frying thermometer

    While this is happening, whisk the flour, sugar, baking soda, salt, and cinnamon in a bowl. Then add the ricotta, orange zest, vanilla, and eggs and stir until it is just combined. Don't over mix.

    In batches, carefully add about a tablespoon of batter (just small spoonfuls works too) in the hot oil and fry until puffed and golden brown all over for 1-2 minutes per batch. Then transfer to a paper-towel-lined baking sheet to drain

    Make sure the oil stays at 340 degrees between batches.

    Caramel Dipping Sauce: 1. Add the brown sugar, butter, and half-and-half to a medium-sized saucepan over medium heat. Stir to combine, then cook until the sugar melts and the mixture starts to thicken (about 2 minutes). Add the Marsala and cook, while stirring, until reduced (about 5 minutes or until desired consistency is met).

    Finally, dust them in a good amount of confectioners' sugar and serve.
