Sausage & Spinach Tortellini Soup

Pasta con Ceci

Italian Wedding Soup
We tried this recipe for the first time over the weekend, and loved it. Note, we made a couple minor modifications to the original recipe from the New York Times, credited below

Chorizo, Potato, and Feta Frittata
Although this recipe was inspired by others found online, it is genuinely an original. We have started to have it both as a dinner option, and for easy warm-up lunches.

Focaccia

We've gone through several recipes and have landed on this one by Anne Burrell from the Food Network. I highly recommend you watch the video of Anne making the recipe to get a good understanding of just how much olive oil to use (I know it seems crazy, but trust her) and what she means by "make finger holes" in the dough.

Tomato Butter Sauce
A long time ago we received a cookbook as a gift and this Tomato Butter Sauce recipe was in it. Since that time, we have been unable to find a better all-purpose tomato sauce. It is silky and smooth and perfect for so many things. You make it in two stages, first making a basic Tomato-Basil sauce, then using that as a base for the Tomato Butter sauce. Tomato Basil Sauce

Pasta e Fagioli
I'm not sure what possessed me, but one day I simply decided I wanted to make Pasta e Fagioli. I found the best recipe I could find, made a couple of minor adjustments and we've been making it every other week since. It's really good.
