Sausage & Spinach Tortellini Soup

Sausage & Spinach Tortellini Soup

Directions

Crock Pot

    In a skillet on medium-high heat, brown and crumble the sausage

    Transfer to the bowl of the crock pot along with the rest of the ingredients, except for the cream, tortellini, and spinach

  3. 3

    Cover and cook on low 7 to 8 hours or high 3 to 4 hours

  4. 4

    ~30 minutes before serving add in the remaining ingredients and continue cooking

  5. 5

    Serve with garnishing ingredients

Instant Pot

  1. 1

    Press sauté on the Instant Pot and cook the sausage with a small amount of olive oil or butter

  2. 2

    Once the sausage is cooked and crumbled, add the onion, carrots, and celery and sauté until the onions are translucent

  3. 3

    Add garlic and cook for 30 seconds

  4. 4

    Add the seasonings and mix. then add the chicken broth, tomatoes, and beans

  5. 5

    Secure the lid and make sure the vent is pushed up to sealing, then select pressure cook/manual and set the cooking time to 5 minutes

  6. 6

    Once it is done cooking, allow the Instant Pot to release steam for ~ 5 minutes and then quickly release the rest of the steam

  7. 7

    Select sauté and bring the soup to a boil

  8. 8

    Add the cream, mixing until fully combined, then add the tortellini and spinach and cook for 4-5 minutes until the tortellini is tender and floats to the top.

    Serve with garnishing ingredients

Stovetop

  1. 1

    Drizzle olive oil in a large pot over medium-high heat and cook the sausage until brown and crumbled

  2. 2

    Add the onion, carrots, and celery and sauté until softened (4-5 minutes)

  3. 3

    Add the garlic and sauté for 30 seconds then add seasonings and mix

  4. 4

    Pour in the chicken broth, diced tomatoes, and beans and bring to a boil

  5. 5

    Cover the pot, reduce heat to low, and let the soup simmer for about 20 minutes, stirring occasionally

  6. 6

    Add in the cream, mixing until fully combined, then add the tortellini and spinach and cook for 4-5 minutes until tortellini is tender and starts to float

  7. 7

    Serve with garnishing ingredients
