Classic Paella
Sweet Potato Salad with Warm Pepita Dressing

Italian Wedding Soup
We tried this recipe for the first time over the weekend, and loved it. Note, we made a couple minor modifications to the original recipe from the New York Times, credited below

Roasted Tomato Soup
Inspired by the recipe by Carolina Gelen - https://carolinagelen.com/tomato-soup/ Combine this with a grilled cheese panini made from the focaccia recipe (found on this site) and Beecher's original cheese.

Mediterranean Seafood Stew

Swamp Fox
Thanks (again) to our friend Trish for recommending this recipe. The key is the slightly spicy Fresno Chili Simple Syrup, which we make at home for purposes of this cocktail.

Chorizo, Potato, and Feta Frittata
Although this recipe was inspired by others found online, it is genuinely an original. We have started to have it both as a dinner option, and for easy warm-up lunches.

One Pan Southwest Chicken and Rice

One Skillet Goat Cheese Stuffed Chicken with Orzo

Focaccia
Our family is just getting started baking bread, and we figured we'd start with something easy like Focaccia. We've gone through several recipes and have landed on this one by Anne Burrell from the Food Network. I highly recommend you watch the video of Anne making the recipe to get a good understanding of just how much olive oil to use (I know it seems crazy, but trust her) and what she means by "make finger holes" in the dough.
