We've been combining the pork with the avocado crema recipe posted last week, and a new Mexican street corn recipe for amazing Barbacoa tacos. Barbacoa (the Spanish word for barbecue) is a slow method of cooking meat that originated in the Caribbean. Traditionally, the meat is cooked in a pit in the ground or over an open fire, but we use the Instant Pot to get the same tender and juicy results.

When making these cookies, keep the following points in mind: Turn any chocolate discs that are poking up from the dough horizontally so that they melt evenly into the cookie. If you want your cookies to have a cake-like texture, replace one of the eggs with 2 egg yolks. Try different high-end brown sugar options to see which one matches your palate - e.g., turbinado, demerara, or muscovado. Get creative! Add your favorite nuts, raisins, or other sweet dried fruits for a personal flavor.

This is our new favorite salad recipe. We've experimented with several modifications and have decided that you can do almost anything and it tastes great. Note: since the dressing makes extra (probably enough for 2-3 salads) you could easily double the salad if you're serving a larger crowd/want extras for the week. however, if you're making extra for a weeklong salad, add the avocado and peach as you go, they won't last tossed in the salad at the beginning of the week. (Serves 4 as a side, 2 as a main)
