Street Corn with Tomato and Feta
This recipe has evolved over time, starting with one or more Mexican street corn recipes that we've tried over the years. One of our favorite additions is tomatoes fresh from our backyard, especially when we have the small "currant" tomatoes that we often plant in our raised bed garden.

Pork Barbacoa
We found this recipe after having Barbacoa tacos at a new restaurant in town, tried it out at home, and loved it. We've been combining the pork with the avocado crema recipe posted last week, and a new Mexican street corn recipe for amazing Barbacoa tacos. Barbacoa (the Spanish word for barbecue) is a slow method of cooking meat that originated in the Caribbean. Traditionally, the meat is cooked in a pit in the ground or over an open fire, but we use the Instant Pot to get the same tender and juicy results.

Avocado Crema
Perfectly balanced Avocado Crema has a velvety smooth texture and pairs well with almost every recipe. This creamy sauce is a light and refreshing replacement to sour cream or avocado slices. Lightly seasoned with garlic, cilantro, and lime, it adds zest and character to every bite!

This is now customized enough that I don't remember where the original recipe came from. I love having tomatoes in my guacamole. Not a lot of people add them, but I love the fresh taste they introduce. Tip: use really good Spanish paprika to maximize the smoky flavor. Warning: the paprika throws the pure green color off, but trust me the flavor is worth the "off color" effect.
