Peanut Butter, Banana Breakfast Cookie

Easy, and convenient breakfast options are popular in our house, and this one is at the top of our list. Easy to mix up, and bake, we also discovered that the cookie dough freezes…

Directions

  1. 1

Mash bananas, mixing in peanut butter and vanilla until smooth. Add oats, cherries, and chocolate chips until incorporated into a thick dough that stays together when scooped.

  2. 2

Line a sheet pan with parchment paper and preheat oven to 350 F degrees. Scoop and shape cookies 3"-4" in diameter, and a 1/2 inch thick. Place cookies on parchment lined sheet pan and bake for 15 mins.

  3. 3

    Let cool for 10-15 mins.

A Fork in the Road

We like to shape and freeze the cookies, pulling them out throughout the week for on-demand goodness in the morning. Find a silicon "press and freeze" mold like this one, fill it with dough, and freeze.
