    Preheat oven to 350 degrees.

    Put the pancetta into a cold 10-inch cast iron pan and cook over medium heat until the fat is rendered and the pancetta bits are crisp. Do not let it burn. Remove the pancetta to a paper towel lined plate. Keep the pancetta fat in the pan and set aside.

    In a large bowl, beat the buttermilk, eggs and oil. Stir in the remaining ingredients including the cooked pancetta bits. Mix well and pour the batter into the hot cast iron pan, the batter should sizzle when you pour it in. Bake until a toothpick inserted in the center comes out clean, about 30 minutes.
